Hot Suet Pastry

  Serves 6 Cooking time:  5 minutes Prep time:       10 minutes  Ingredients 250gr plain flour pinch salt 90gr pork dripping 100ml water   Method Place the plain flour  and salt in a bowl. Whisk to break up any lumps and spread the salt. Place the dripping and water in a saucepan and bring to the boil. Make a well in the centre of the flour and mix in the hot dripping and water.      (Use a spatula as it is hot!). When fully combined, continue to work for a couple of minutes. Salmon Wellington

Salmon wellington with roast beetroot   This is a lovely summers dish.  It can be used with trout instead of salmon if it is in season.  I like to serve it quite rare, but if you like your fish cooked more then just leave it to rest more in a very low oven.
